Italian Bread with Bruschetta
12 slices Italian bread, 1/2 inch thick
1/4 cup Easy Butter Infused vegetable oil
2 medium tomatoes, chopped (11/2 cups)
2 garlic cloves, finely chopped
3 tablespoons chopped fresh basil leaves
2 tablespoons small capers, drained
1/2 teaspoon salt
1/2 teaspoon pepper
Stir together 1/8 cup of infused vegetable oil, tomatoes, garlic, basil, capers, in a glass bowl. Add salt and pepper to taste. Add salt at the end, as it tends to break the tomatoes up. Preheat the oven to 300° F. Brush Italian Bread slices with olive oil, salt, pepper and Italian seasoning and place in the oven. Remove when slices begin to brown. Spoon the tomato mixture onto the toasted Italian Bread slices and you’re ready to eat. To bring out the beautiful colors of bruschetta, serve on white plates and enjoy!
