Ingredients:
3/4 Cup Easy Butter cannabutter
2 Cups sugar
2 Eggs
1 Cup crushed pineapple, drained (save the juice)
1 Teaspoon vanilla
3 1/2 Cups flour
1 Teaspoon soda
2 Teaspoon baking powder
1/2 Teaspoon salt
Directions:
Cream butter and sugar. Stir in eggs, one at a time. Stir in drained pineapple and vanilla. Combine flour, soda, baking powder, and salt. Stir into butter mixture. The dough will be soft. Drop one tablespoon at a time onto a lightly greased cookie sheet. Bake at 350 degrees for 10 minutes, until lightly browned. Cool slightly. Ice with pineapple glaze.
Pineapple Glaze:
5 Tablespoons reduced pineapple juice
2 Tablespoons butter
1/4 Teaspoon salt
1 Teaspoon vanilla
Powdered sugar
Boil and reduce reserved pineapple juice to
5 tablespoons. While hot, add butter, salt and vanilla. Gradually add powdered sugar until smooth.
